Holiday Mint Jewel Brownies

What makes these brownies so irresistible? Our classic, ultra-fudgy brownie recipe meets the crunch and sparkle of Winans Holiday Mint Jewels—both folded into the batter and sprinkled on top. A drizzle of white and dark chocolate adds that final touch of holiday shine.

Ingredients:

1 cup unsalted butter (2 sticks) softened

1 1/2 cups light brown sugar

1 cup granulated sugar

1 tsp peppermint extract

4 large eggs

1 1/2 cups unsweetened cocoa powder

3/4 cup all purpose flour

1/2 tsp salt

1/2 cup Winans Holiday Mint Jewels, chopped

Winans Holiday Mint Jewel topping:

1/2 cup Winans white chocolate

1/4 cup Winans dark chocolate

3/4 tsp coconut oil, divided

1/4 tsp peppermint extract, divided (optional)

1/2 cup Winans Holiday Mint Jewels, chopped

Instructions:

  1. Preheat oven to 350°F. Line an 8x8 or 9x9 cake pan with parchment

  2. Using a stand mixer, beat the butter, brown sugar, granulated sugar, and peppermint extract, for 2 minutes.

  3. Add in the eggs, one at a time and mix until each egg is fully incorporated and the batter starts to look lighter in color

  4. Fold in the cocoa powder, flour, salt, and mix until the batter is just combined.

  5. Gently fold in the Winans Holiday Mint Jewels. Pour the batter into prepared cake pan.

  6. Bake at 350°F for 40-50 minutes or until toothpick inserted in the middle comes out mostly clean.

  7. Remove from the oven and let fully cool in the pan.

Winans Holiday Mint Jewel topping instructions:

  1. Melt the white chocolate and 1/2 tsp coconut oil in a microwave safe bowl. Melt in intervals of 20 seconds and stir between each interval until fully melted and smooth. Stir in 1/8 tsp peppermint extract if desired.

  2. In a separate bowl, repeat the process with dark chocolate, 1/4 tsp coconut oil, and melt in intervals. Add 1/8 tsp peppermint extract if desired.

  3. Drizzle dark chocolate over COOLED brownies diagonally. Allow to cool for 10 minutes in the refrigerator to set.

  4. Drizzle white chocolate over brownies diagonally. Immediately sprinkle 1/2 cup chopped Winans Holiday Mint Jewels on top. Allow to cool before removing brownies from the pan and slicing.
