Preheat oven to 350F°. Line cookie sheets with silicone mat OR parchment paper.

In a bowl, combine dry ingredients (flour, cocoa powder, salt, and baking soda). Set aside.

Using a stand mixer, cream together butter and peanut butter. Add 1/2 cup packed brown sugar and 1/2 cup granulated sugar. Mix until combined.

Add vanilla and egg, and mix again. Slowly add dry ingredients and mix until just combined. Do not over mix dough.

Using a small standard cookie scoop (2 TB), scoop balls of dough and then roll dough balls in a bowl of remaining granulated sugar.

Chill dough balls in the refrigerator for 10 minutes before baking. Approximately 12 dough balls fit on standard cookie sheet.

Bake 10-12 minutes, until cookies are matte and have a crackle appearance. Remove cookies from the oven and immediately press a Winans Peanut Butter Delight on top, one for each cookie.
