Pecan Wurtle Coffee Cake

Makes approximately 12 slices

Ingredients:

1/2 cup butter (1 stick) softened

1 cup granulated sugar

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

2 eggs

1 tsp vanilla

2 1/4 cups all-purpose flour

8 oz sour cream

Pecan Wurtle Topping:

1 cup all-purpose flour

1 cup packed brown sugar

1 tsp ground cinnamon

1/2 cup butter (1 stick) cold

1/2 cup shredded coconut

12 Winans Pecan Wurtles, chopped

Instructions:

  1. Preheat oven to 350°F. Grease and flour a 9-inch springform pan; set aside.

  2. Using a stand mixer, beat butter on medium high speed for 30 seconds. Add the sugar, baking powder, baking soda, and salt. Beat until well combined, scraping the sides of the bowl as needed. Add eggs, 1 at a time, until incorporated. Beat in vanilla.

  3. Alternately add flour and sour cream to butter mixture, beating on low speed after each addition until just combined. The mixture may appear thick.

  4. Spread half of the batter into the prepared pan. Sprinkle with half of the Pecan Wurtle Topping. Spoon the remaining batter in mounds over the Wurtle mixture. Carefully spread to an even layer and sprinkle with the remaining Pecan Wurtle Topping.

  5. Bake at 350°F for about 55-65 minutes, or until toothpick inserted in the middle comes out clean. Oven temperatures may vary.

  6. Cool on a wire rack for 20 minutes. Use a thin spatula or butter knife and run around edges of cake before releasing springform pan.

Pecan Wurtle Topping:

  1. In a large bowl, combine flour, brown sugar and cinnamon. Cut in cold butter until the mixture resembles coarse crumbs; add the coconut and chopped Winans Pecan Wurtles and stir.
